one possibility is that if you are brand new to weight training you may have gained a little muscle, which could be showing up on the scale. If that's the case, it's a good thing! That may be why you are noticing changes in your body.
You are exercising a LOT and eating fairly low calories. I think your calories may be too low. And eating very few carbs is not a good idea. Carbs are necessary for vital functions in our body, including the ability to use stored fat. Any weight lost on a very low carb diet is likely to come back as well.
I think you would be better off eating a balanced diet with lean proteins, complex carbs from natural sources, and small servings of good fats. Keep the spinning if you enjoy it so much, but I would substitute a couple of sessions with high intensity interval training.
