Thai and Chinese won't do you many favors. The sauces, delicious though they may be (I'm a huge sucker for Thai, and I live next to a restaurant, I walk by it every day, ugh), are generally fatty and sugary. And not the good kind of fatty and sugary.
Cholesterol issues generally mean you should watch saturated fat intake, so limiting fatty meats is a good way to go. Have you tried soluble fiber interventions? They are effective in certain individuals (my step mother is one, she got off her meds just by eating oatmeal!) Cardio can also raise your HDL levels, though again, only in certain populations. Some people also see positive results with the use of n-3 FAs. Flax, fish, nuts or supplements can help with your intake if it is low.
Protein should be no more than about 30-35g at a time, any more than that and it will get wasted, since you can only use so much at once.
