Try giving him some simple easy options, with fuss free meal planning thrown in.
Example plan.
Breakfast
Bowl Whole-grain Cereal, 4 Eggs Whites + 1 Yolk scrambled and half a Satsuma. Leave Satsuma for 10-15 minutes to digest, then eat rest of food, so it has less chance to impede Fruit digestion.
Snack
Portion of Low Fat Cheese + Apple. Apple first, as per Satsuma instruction.
Lunch
Portion of Mushrooms fried in Olive Oil with a small portion of Pasta and some diced Ham.
Snack
Ham Sandwhich, made with Whole-grain bread. Could include sliced Tomato and / or Cucumber and / or Lettuce and / or a bit of Mustard as well if desired.
Dinner
Grilled Chicken, with blended and boiled Carrots and portion of Peas.
Snack
Portion of Peanuts and other half of Satsuma.
Most of this requires little cooking. The Mushroom with Lunch element would take about 5 minutes, the Pasta little longer.
As for the Dinner, Peas, no time at all, Carrot Prep no time at all, Chicken no time at all. I can fry a piece in around 14 minutes. So you're looking maybe 15 minutes all in to make that. Carrot blending could start after Chicken has begun grilling.
Rest of the food can be eaten cold, so for now it simplifies things.
