Cucumber and Cantaloupe Salad - Healthy Weight Loss Recipe

Cucumber and Cantaloupe Salad
(makes 4 servings)

Ingredients:Nutrition Facts for Cucumber and Cantaloupe Salad
small bullet

1 medium sized cucumber

small bullet

3 cups cantaloupe, cubed

small bullet

2 tablespoons lemonade or limeade concentrate, undiluted

small bullet

1 tablespoon water

small bullet

1 teaspoon vegetable oil

small bullet

1/2 teaspoon chili powder

Directions:
1.Cut cucumber in half lengthwise then slice each half crosswise into 1/4" pieces.
2.

Combine cucumber and cantaloupe in a medium sized bowl.

3.

In a small bowl, combine juice concentrate, water, oil and chili powder and mix well then pour over cucumber mixture and toss well.

4.

Cover and chill completely before serving.
