Garden Fritatta
(makes 4 servings)

Ingredients:Nutrition Facts for Garden Fritatta
small bullet

1 medium onion, chopped

1 clove garlic, minced

small bullet

2 medium tomatoes, chopped

small bullet

1 tablespoon vegetable oil

small bullet

1/2 teaspoon Italian seasoning

small bullet

1/4 teaspoon black pepper

small bullet

1/2 teaspoon salt

small bullet

6 eggs, lightly beaten

small bullet1-10 ounce package frozen spinach, thawed and squeezed dry
small bullet

1/2 cup sharp cheddar cheese, grated

Directions:
1.

Saute onion, garlic, and tomatoes in oil until tender.

2.

Add Italian seasoning, pepper and salt to the beaten eggs and add to onion mixture.

3.

Stir in spinach and cheese.

4.

Cover with a tight fitting lid and turn heat to low.

5.

Cook for 15 minutes and check for firmness.

6.

Cut into wedges with spatula and serve.
