Pasta Salad with Spinach, Tomatoes, Peas and Honey Dijon Dressing
(makes 4 servings)

Main Ingredients:Nutrition Facts for Pasta Salad with Spinach, Tomatoes and Peas

6 ounces bow-tie pasta

2 cups torn fresh spinach

small bullet

2 cups cherry tomatoes, halved

small bullet

1 1/2 cups (10 ounces) frozen peas, thawed

small bullet

1/2 cup shelled roasted pistachios (optional)

small bullet

Honey-Dijon dressing (recipe follows)

Honey Dijon Dressing ingredients:
small bullet2 tablespoons honey
small bullet

2 1/2 tablespoons Dijon mustard

small bullet

3 tablespoons red wine vinegar

small bullet

1 1/2 teaspoons dried oregano

small bullet

1/2 teaspoon garlic powder

Directions:
1.Cook pasta according to package instructions then drain in a colander.
2.

In a large bowl, combine pasta, spinach, tomatoes and peas with the pasta.

3.

In a small bowl, combine all ingredients for the dressing and mix well.

4.

Pour dressing over pasta mixture and toss well to coat.

5.

Serve with pistachios garnished on top.
