Simply Wonderful Squash
(makes 4 servings)

Ingredients:Nutrition Facts for Simply Wonderful Squash
small bullet

1 winter squash (Butternut, Hubbard or Delicata)

small bullet

2 teaspoons low sodium soy sauce

small bullet

2 tablespoons maple syrup or honey

Directions:
1.

Cut squash in half, peel it and remove seeds. Cut into one-inch cubes.

2.

Place squash into a large pot with 1/2 cup of water. Add the soy sauce and syrup or honey.

3.

Cover and simmer over medium heat until the squash is fork tender (15-30 minutes.)
