I'm not sure if anyone has mentioned this but you could try supplements like Beta-Alanine and Citrulline Malate which will increase the amount of blood flow towards your muscles when you are exercising. I think you're correct to focus on your diet as much as possible. 2100 calorie seems like a pretty attainable goal to start out with.
