Everytime I've tried them, doesn't matter what brand, I get really bad gas/diarrhea. I give up. Protein bars don't do it to me. Does it make a difference?

I had bad gas too when I first tried protein shakes.
Now I get Lactose Free Whey Protein or Soy Protein.
So far... those are fine for me!

Do you have the same problems with milk/cheese? I wonder if you might have an intolerance to dairy products?

No, I have no problems with milk or cheese. I eat a lot of both with no problems.

I've used Designer Whey from the store and ON Whey Protein Gold Standard stuff, the double chocolate one.

Then possible a Soy one might be one to try, or there's two sites called Trueprotein and Myprotein, that do customised mixes.
One is American, one is British, so whichever is best for you, might be worth checking out.
