Chipotle Chicken Soup – Healthy Weight Loss Recipe


(makes 3 servings)


Ingredients: Nutrition Facts for Chipotle Chicken Soup

1 large onion, chopped

1 clove garlic, minced

1 tablespoon olive oil

12 oz. skinless, boneless chicken breasts, chopped

1 14.5 oz. can of low-sodium chicken broth

small bullet

2 teaspoons chopped canned chipotle peppers in adobo sauce*

small bullet

1/2 teaspoon sugar

small bullet

1/4 teaspoon salt

small bullet

2 cups tomatoes, chopped (or 1 14.5 oz. can diced tomatoes)

small bullet 1/4 cup fresh cilantro, chopped


1. In a Dutch oven, cook onion and garlic in olive oil over medium-high heat about 4 minutes or until onion is tender.
2. Add chicken and cook for 2 minutes.
3. Add broth, chipotle peppers, sugar and salt.
4. Bring to boiling then reduce heat. Simmer, uncovered for 15 minutes.
5. Remove from heat and add tomatoes and cilantro.
