Cucumber and Cantaloupe Salad – Healthy Weight Loss Recipe


(makes 4 servings)


Ingredients: Nutrition Facts for Cucumber and Cantaloupe Salad

1 medium sized cucumber

3 cups cantaloupe, cubed

small bullet

2 tablespoons lemonade or limeade concentrate, undiluted

small bullet

1 tablespoon water

small bullet

1 teaspoon vegetable oil

small bullet

1/2 teaspoon chili powder


1. Cut cucumber in half lengthwise then slice each half crosswise into 1/4″ pieces.
2. Combine cucumber and cantaloupe in a medium sized bowl.
3. In a small bowl, combine juice concentrate, water, oil and chili powder and mix well then pour over cucumber mixture and toss well.
4. Cover and chill completely before serving.
