Melon Salsa – Healthy Weight Loss Recipe

(makes 4-6 servings)

Ingredients: Nutrition Facts for Melon Salsa
small bullet

1 jalapeño, seeded, stemmed and chopped

small bullet

1 shallot, peeled and chopped

small bullet

1 green onion, sliced

small bullet

1/2 green bell pepper, seeded and chopped

small bullet

1/3 cup cilantro, chopped

small bullet

2 tablespoons fresh squeezed lime juice

small bullet

1/8 teaspoon salt

small bullet 1/2 cantaloupe, peeled, seeded and cut into chunks (you can use other types of melon if desired)

 

Directions:
1. Place all ingredients in a blender except cantaloupe. Process until ingredients are blended.
2. Add cantaloupe chunks, cover and process until the melon is coarsely chopped.
3. Drain off any excess liquid and serve.

 

Serving Suggestions:
small bullet Excellent as a dip for homemade Chili-Lime Tortilla Chips or Garlic Pita Chips.
small bullet Instead of chips, use celery sticks, cucumbers cut into 1-inch sticks, carrot sticks, etc.
