Minestrone Soup – Healthy Weight Loss Recipe

Ingredients: Nutrition Facts for Minestrone Soup

3 cups water

1/2 cup each: carrot, celery, onion (chopped)

small bullet

2 cloves garlic, minced

small bullet

1 tsp each: basil and oregano, crushed

small bullet

1/8 tsp. pepper

small bullet

1, 15 oz. can red kidney beans

small bullet

1, 15 oz. can tomatoes, chopped

small bullet

1/2 cup cabbage, coarsely chopped

small bullet

1/2 cup zucchini, sliced

small bullet 1/2 cup pasta, uncooked

 

Directions:
1. In a large sauce pan, combine water, carrots, celery, onion, garlic, basil, oregano, and pepper.
2. Bring to boil, reduce heat. Cover and simmer for 15 minutes.
3. Drain can of kidney beans and add kidney beans, tomatoes, cabbage, zucchini and pasta. Return to boil, reduce heat. Cover and simmer for 5 to 10 minutes, until pasta is tender.
