New Potato Leek Soup – Healthy Weight Loss Recipe

Ingredients: Nutrition Facts for New Potato Leek Soup
small bullet

1 lb. new potatoes, halved

3 small leeks, trimmed

small bullet

1 1/2 tablespoons butter

small bullet

1 tablespoon mustard seeds

small bullet

1 onion, chopped

small bullet

1 garlic clove, thinly sliced

small bullet

1/4 cup white wine

small bullet

1 3/4 cups vegetable stock

small bullet

1 3/4 cups water

small bullet

2 teaspoons nutmeg

small bullet small handful of cilantro, coarsely chopped

 

Directions:
1. Halve the leeks lengthwise and then cut across into thin slices.
2. Melt butter into a saucepan. Add the potatoes, mustard seeds, onion, garlic, white wine and sauté for 5 minutes.
3. Add vegetable stock, water and nutmeg and bring to a boil. Reduce heat, cover and simmer for 10 minutes or until potatoes are tender.
4. Add leeks and cilantro and simmer for 5 minutes.
