This is a recipe I basically made up, but really is good.
Ingredients: 2 or 3 Zucchini
2 T. Kraft Sun Dried Tomato Vinaigrette Dressing
Mrs. Dash garlic & herb seasoning
Parmesan cheese (grated)
2% reduced fat Mozz/Cheddar shredded cheese
2 or 3 Zucchini (sliced longways into 1/8 " or 1/4" strips, then cut those in half so your pieces are about 3" long x 1/8" to 1/4" thick)
Put them in a gallon ziploc and pour 2 tablespoons Kraft Sun Dried Tomato Vinaigrette dressing over them, season also with Mrs. Dash Garlic & Herb seasoning. Close bag and toss till well coated. Arrange on a baking dish and sprinkle or grate fresh Parmesan cheese over them. Bake for 20 minutes at 400 degrees. Take out and set the oven to Broil. Sprinkle Shredded 2% Mozz/cheddar cheese blend over the zucchini (just a little!) Then put back in oven on top rack. Broil for about 1 minute or so until the cheese is lightly browned.
Enjoy! You can modify it in alot of ways but it is quick and easy and full of flavor.
I use this recipe for Squash and also Tilapia Fish!

They really don't have to bake for the full 20 minutes, it just depends on how thick your slices are or how you like the texture. I generally bake them for about 15 minutes, then broil for no more than 1 minute (you kind of have to watch them, the cheese browns really quick!)
I have done this dish with just zucchini and have also added red bell pepper, green bell pepper, fresh sliced mushrooms, and onions to it. YUMMY! The best part of this is that son likes it too, as well as husband. Any time I can "sneak" a healthy food option in, I count it a victory!

Oh man I've been eating so much zucchini lately! People have been giving it to me for free so i've been eating it for atleast 4 meals a day... in fact I just finished a bowl of it. Have you tried zucchini with cottage cheese on it? I'm lazy when i cook dinner (because i'm usually exhausted by the time I get home). I often slice up zucchini then add cottage cheese (however much you want) and microwave or bake until zucchini is tender. Very tasty!
