Summer Veggie recipes

Hey guys! With all the fresh produce in abundance right now, I have been enjoying more vegetable dishes and always looking for different things to cook. So if you have any recipes for quick, easy summer veggies, or other types of summer recipes like outdoor grilling, please share them!
Okay I'll go first:

Grilled Zucchini with Garlic and Lemon Butter Baste

Ingredients
* 8 medium zucchini (about 2 1/2 pounds), trimmed, halved lengthwise
* 1/2 cup (1 stick) butter
* 1 tablespoon frozen unsweetened lemon juice concentrate or 2 tablespoons fresh lemon juice
* 1 teaspoon lemon-pepper seasoning
* 1 teaspoon garlic powder
* 1 teaspoon dried oregano
* 1/4 teaspoon curry powder
* 1/4 cup grated Parmesan cheese (optional)

Preheat barbecue (medium heat). Score cut side of zucchini halves diagonally about 1/4 inch deep at 1-inch intervals. Melt butter with lemon juice concentrate, lemon-pepper seasoning, garlic powder, oregano, and curry powder in heavy small saucepan. Season with salt and pepper. Brush seasoned butter on cut side of zucchini. Place zucchini on grill and cook until charred on all sides and just beginning to soften, about 12 minutes. If desired, arrange zucchini on grill, cut side up, and sprinkle with cheese; close lid of barbecue and cook until cheese just softens, about 1 minute. Transfer zucchini to platter.

Pair this with a nice salad and grilled or baked chicken breast and you have a great low fat, healthy summer meal! :D

(I've made this basic recipe and love it - I bake mine in the oven for about 15-20 minutes - yumm!)

OMG.... That look soooo GOOD!!!! I can totally eat that over junk food :P

Cold Gazpacho soup w/shrimp:

Make a cold gazpacho soup by blending together ripe tomatoes, cucumbers, bell peppers (red, yellow), onion, garlic, fresh herbs, and desired seasonings in a blender or food processor. Top your bowl with cold, precooked shrimp & avocado slices to add protein and make it a complete meal. Here is one recipe I found that really sounded good, of course you can modify or reduce the ingredients as needed:
Ingredients:
1 large can (20-something oz) whole peeled + 3 - 14 oz cans Progresso diced tomatoes + juice
2-3 heirloom tomatoes (diced, save juice and add to bowl)
1 basket small orange baby tomatoes (cut in half across the equator)
1/4 - 1/2 cup white wine or champagne vinegar (depending on consistency & taste)
1 red pepper (cut out ribs, seeds & dice)
1 yellow pepper (cut out ribs, seeds & dice)
1 jalepeno pepper (cut out ribs, seeds & dice)
1 avocado (half for the soup, half diced for the garnish)
2 large shallots, diced
2 cloves garlic, minced
4 ribs celery, diced
1 english cucumber (cut off most of the green, leave a little for color, scoop out seeds, dice)
juice of 1 lime
olive oil
balsamic vinegar
10 or so large basil leaves, cut in a chiffonade for garnish
sea salt, fresh ground pepper

save a tablespoon or two of each of the baby tomatoes, red pepper, yellow pepper, cucumber, celery, half the avocado, and 1/2 tbsp of diced jalepeno for the garnish. put everything but the avocado in a small bowl, add a swirl of olive oil, some sea salt, fresh ground pepper and stir to combine. add the avocado and give it a quick stir gently. set aside.

if using a stick blender, combine all the vegetables in a large glass (or non-reactive) bowl along with half the vinegar and blend. I like mine a bit chunky, not super smooth, so I blended in pulses moving the stick blender along the outside of the bowl. If using a cuisinart, just pour it all in and pulse til you get the consistency you'd like. add more liquid (vinegar, stock, water depending on your taste) if you want a thinner consistency. taste and add lime juice if you think it needs a kick. taste for seasoning and add salt and pepper as you'd like.

Now on mine I would add the shrimp on top with a little bit of diced cilantro & avocado instead of basil leaves. - YUM!!!
