Parchment baked haddock

I made this tonight.

Cut a large rectangle of parchment paper for each serving. Place a 6 oz or so fillet of haddock, sprinkle it with salt and pepper. Sprinkle with chopped fresh parsely. On top of it place thinly sliced red and yellow peppers, some thinly sliced onions, give it a light drizzle of olive oil. Bake in a preheated 400 degree oven for about 16 minutes. Let rest for 5 minutes before opening.

Sounds great! I've been making fish in parchment paper for some time now - it's always so juicy and flaky! You make them separate, huh? Is that why you cook for only 16 minutes vs lets say 30? I suppose you could also vary the toppings to each individuals taste too :)

I'm going to copy and paste and try it this way. Yummy!

Think of the clean up Lu when everyone is eating out of a pouch, throw paper away wash fork, all done

I used to be in the seafood industry and we always recommended cook at 450 at 10 minutes per 1 inch thickeness of the fillet.

As we all know ovens vary in temp but I have been doing this for years
